Pear compote from one of my readers in France!
One of my reader’s and former classmates, Alain, tried my Flourless Chocolate Cake recipe all the way in Paris, France! He poured the batter in small individual ramekins and sprinkled powdered sugar on them. He served it with fresh pear sauce instead. Looks delicious!
For 1 serving of Alain’s fresh pear sauce (or compote de poires in French), you will need:
– 1 ripe pear
– 1/4 cup orange juice
– 2 tablespoons unsalted butter
– 2 tablespoons sugar
To make the compote:
Peel the pear and core it. Cut the fruit in small cubes. Melt the butter and sugar in a small sauce pan on medium heat. Once the butter and sugar are melted, add the pear cubes and orange juice. Cover and cook 25-30 minutes, while stirring from time to time to make sure the whole mixture does not attach to the bottom of the pan. Remove from the heat and pour the compote in a bowl. Wait a few minutes for the compote to cool down. Serve either lukewarm or cold.
