Mmm Meatballs

Mmm meat and lots of it!

Every Sunday I try to plan out my meals for the week, particularly my lunches.  This causes less stress at night/in the morning when I’m prepping lunch and in turn, I’m less tempted to go out with coworkers if I have something healthy and delicious to devour.  I made these meatballs last week and they seriously lasted me through lunch all week.  I never got sick of them because I ate them with different sides every day.  Here’s a really simple recipe that will keep you full and satisfied throughout your afternoon.

Before everything is all mixed up

For the meatballs, you will need:

– 2 lbs ground beef
– 1 lb ground Italian sausage
– 1 white onion, diced
– 2 carrots, diced
– 3 eggs
– 1/2 cup almond meal
– 1/2 cup fresh cilantro, chopped
– 1/2 cup fresh parsley, chopped
– 2 tablespoons dried oregano
– 2 tablespoons cumin
– 1/4 teaspoon cayenne pepper
– sea salt and pepper to your liking

For the sauce, you will need:

– 2 16 oz cans diced tomatoes
– 1 can (6 oz) tomato paste
– 3 cups fresh basil, chopped
– 6 garlic cloves, minced
– sea salt and pepper to your liking

To make the meatballs :

There's something super satisfying about mixing everything together with your hands.

Make the meatballs

Mix all of the meatball ingredients together with your hands in a large bowl.  Form large meatballs.  I made them about the size of a tennis ball.  Feel free to make them smaller or bigger. 

Make the sauce

In a large bowl, mix all of the sauce ingredients together.

Cook the meatballs

Dump the meatballs in a slow cooker (layer them if necessary) and pour the sauce over them.  Cook for 6-8 hours on low.  I love making them at night before I go to bed and wake up to the delicious smell.
