Pretty Lights and Paleo Pancakes

I woke up this morning to a beautiful snow fall and was inspired to stay in and make breakfast.  I blasted some Pretty Lights and got to work!Since I’ve been eating a lot of eggs, bacon, and fruit for breakfast lately, I had a craving for something different.  Pancakes!   Now that I’m eating 100% paleo, I had to get creative and cook something without all-purpose flour.  I searched the internet and found this pretty awesome recipe that I slightly modified.  These will keep you more satiated than regular pancakes…read more

First snow fall of the season = vanilla almond milk pancakes

I woke up this morning to a pleasant surprise…snow!  It’s not even Halloween yet and there’s snow falling outside my window.  I decided it was a perfect time to be domestic and cook some delicious pancakes. Here’s a recipe for my fellow CrossFitters who follow the paleo diet. I made these the other day and they are divine. Ingredients: – 1 medium size zucchini – 1 medium size green onion – 1 large egg – Sea Salt to taste – Pepper to taste – 2 1/2 tablespoons olive oil for frying Directions: 1. Breakfast of Champions

Breakfast is my favorite meal of the day.  After a 5:45 am spinning class, I was famished and decided to whip something tasty to start off my day.  Half a grapefruit, sunny side up eggs, smoked salmon (doesn’t look too good in the picture, but I assure you it was), and a piece of raisin ezekiel bread (organic sprouted 100% whole grain flourless bread) with butter.  I finished it off with a big glass of coconut milk.  Mmm…
